During the process, we will first wash and cut the fresh mushrooms and then put them in a freezer to freeze. In the next step, we will place the frozen mushrooms in a vacuum chamber to gradually increase their temperature. This causes the ice crystals in the mushrooms to sublimate or transition directly from a solid to a gas, without passing through a liquid phase. The vacuum chamber removes the water vapor, leaving behind a dry, crispy mushroom with a long shelf life.
